Freeze
drying (lyophilization) is the process by which a flower is
frozen to a state that its cell structure has so much integrity
that, when submitted to a vacuum, the water goes from a frozen
state to a vapor state (sublimation) and evacuates the cell
structure. The size and shape will stay relatively the same
but the color becomes more intense. This process is carefully
monitored and takes up to 2 weeks to produce a keepsake quality
flower.
